In fact it is all about putting the right ingredients together, isn't it? Just stuff a chicken (or other bird) with lemon, thyme and white wine. Add herbs and spices and oil/butter to it. Parboil potatoes and parsnips and put them on a roasting tin under the bird with pepper and salt and oil/butter, and put both in a preheated oven (200C), then reduce heat to around 170C. Depending on the size of the bird, count about one to one-and-a-half hours. The fat from the bird should keep the potatoes and parsnips from burning, you may have to take those out after an hour to keep them from burning or drying out and keep them warm until the bird is ready. Just a schematic, but it does make sense...

Wild Goose Lemon Stew A wonderful dish for stormy nights in fall or winter, where a good stew warms you up both physically and mentally. You can serve it with rice if you keep it rather moist, or with mashed potato if you let it thicken a bit more. Whatever the way you serve it, make sure you don’t finish it by continuous tasting, as I almost felt like doing after the first spoonful of it during cooking. The different ingredients combined with the fresh meat give it different depths and a velvety and meaty feel in the mouth. Then the anis taste and the other herbs start releasing their flavours with in the end a very distant but still distinct lemon taste. To finish each spoonful, the piment d’espelette gives a warm tingling in the throat, just hot enough to make you enjoy it and wish for more. My name is Emmanuel. I live in the Netherlands and have both Dutch and French Nationality. That is the official part. The personal part is different, and I will certainly share my love of food with all of you. Recipes, ideas, successes and even disasters, but in all cases the drive to 'just try new things' and 'realise not everything is like it could be'. I may also share other things with you, like the fact I am a writer and I love to write challenging short stories and am still heavily writing and researching data for my 3000+ page children's book based in Switzerland. Otoh I am also a business adviser and -auditor with the focus on long-term changes which actually often lead to short-term new enthusiasm and income.
